Keto Eggs Scrambled with Feta and Spinach

Ingredients:

  • 2 large Eggs (Whole)
  • 1/2 ounce Feta Cheese
  • 2 cups Baby Spinach
  • 1 tablespoon Canola Vegetable Oil

Directions:

  1. In a small non-stick skillet, wilt spinach with 1 tablespoon of water over medium heat.  Once all the water has evaporated and the spinach has wilted add 1 tablespoon of oil to the skillet and toss with the spinach to coat the pan.
  2. Add lightly beaten eggs and cheese and cook until set.
  3. Season with salt and freshly ground black pepper and serve immediately.
