Eggs Scrambled with Avocado, Onions and Tomato

Ingredients:

  • 2 large Eggs (Whole)
  • 1/2 fruit without skin and seed California Avocados
  • 1 small whole (2-2/5" diameter) Red Tomato
  • 2 tablespoons chopped Onions
  • 1 teaspoon Extra Virgin Olive Oil

Directions:

  1. Heat oil in a nonstick skillet over medium-high heat.  Dice onions, avocado and tomatoes then set aside.
  2. Sauté white onions in skillet until translucent.
  3. Add eggs, avocado and tomatoes and scramble together until eggs are set.
  4. Season to taste with salt and freshly ground black pepper and serve immediately.
