Ingredients:

  • 2 pounds ground bison (buffalo)
  • 2/3 cup (107g) chopped red onion
  • 1 1/2 cups (152g) chopped celery
  • 4 ounces canned diced green chili peppers
  • 1 3/4 cups canned whole peeled plum tomatoes
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin seed
  • 1 cup (8 fluid ounces) water

Directions:

  1. Preheat a skillet over medium high heat. Add ground buffalo and diced onion. While cooking break up the buffalo into bite sized pieces and season with salt and freshly ground black pepper. Cook until meat is browned and onions are softened. 
  2. Remove the meat and onions from the pan. Using the same pan add the celery, green chilis, tomatoes (14 oz can; blend in a bender to break up into smaller chunks if desired), chili powder and cumin. Cook until the tomatoes cook down to a thick paste; about 5 minutes then add the water and the meat mixture. Cook for 10 minutes until reduced. Serve immediately. For a hearty meal serve over Shiritaki noodles and top with shredded cheese and chopped onions if desired.
