Keto Deli Delhi Chicken Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 1 ounce English Walnuts
  • 1 tablespoon Sour Cream (Cultured)
  • 1 teaspoon Curry Powder
  • 1 tablespoon Real Mayonnaise
  • 1/2 stalk, medium (7-1/2" - 8" long) Celery
  • 1/2 small (2-1/2" dia) (approx 4 per lb) Apples
  • 1 teaspoon Sucralose Based Sweetener (Sugar Substitute)
  • 8 ounces boneless, cooked Chicken Breast
  • 1/2 teaspoon Ginger (Ground)

Directions:

Serve this savory chicken salad on a bed of lettuce. Or make an open-face sandwich or roll it in a wrap. Just be sure to count the extra carbs. 
  1. Dice chicken breast into 1/3-inch cubes.
  2. In a bowl mix mayonnaise, sour cream, curry powder, ginger and sugar substitute until smooth.  Dice the apple and celery.
  3. Add chicken, apple, celery and walnuts to the mayonnaise mixture. Mix until combined.
