Ingredients:
- 1 ounce English Walnuts
- 1 tablespoon Sour Cream (Cultured)
- 1 teaspoon Curry Powder
- 1 tablespoon Real Mayonnaise
- 1/2 stalk, medium (7-1/2" - 8" long) Celery
- 1/2 small (2-1/2" dia) (approx 4 per lb) Apples
- 1 teaspoon Sucralose Based Sweetener (Sugar Substitute)
- 8 ounces boneless, cooked Chicken Breast
- 1/2 teaspoon Ginger (Ground)
Directions:
Serve this savory chicken salad on a bed of lettuce. Or make an open-face sandwich or roll it in a wrap. Just be sure to count the extra carbs.
- Dice chicken breast into 1/3-inch cubes.
- In a bowl mix mayonnaise, sour cream, curry powder, ginger and sugar substitute until smooth. Dice the apple and celery.
- Add chicken, apple, celery and walnuts to the mayonnaise mixture. Mix until combined.
