How to Calculate Atkins Net Carbs
Atkins Net Carbs = Total Carbohydrates – Fiber – Sugar Alcohols/Glycerin (if applicable)
×INGREDIENTS
-
0 3/4 lb Kale
-
0 1/2 tsp Salt
-
0 1/8 teaspoon Sucralose Based Sweetener (Sugar Substitute)
DIRECTIONS
For this recipe you will need to use 2 cups of oil.
- Pat kale leaves thoroughly dry with paper towels. Stack four or five leaves, roll up into a tight cylinder and slice thinly (about 1/8 wide).
- Heat oil in a large skillet just to the smoke point (about 360°F on a candy thermometer, you will need 2 cups of frying oil such as coconut or rice bran oil). Add small handfuls of kale and stir gently 20 to 30 seconds. Remove with a strainer and drain on paper towels. Repeat until all kale is used.
- Gently toss kale leaves with salt and sugar substitute. Serve immediately.
Cooking Tip
Having a party? When planning your low carb spread, think about which dishes you can make in advance and which need fresh ingredients that day.
