Keto Daikon and Celery Salad

Ingredients:

  • 2 stalk, medium (7-1/2" - 8" long) Celery
  • 1/8 teaspoon Salt
  • 1/4 cup Real Mayonnaise
  • 1 tablespoon Dijon Mustard
  • 2 teaspoons Fresh Lemon Juice
  • 2 2/3 servings Daikon
  • 2 tablespoons Parsley
  • 1/8 teaspoon Black Pepper

Directions:

  1. In a large bowl, mix mayonnaise, mustard, and chopped parsley.
  2. Coarsely grate daikon and add to bowl. Add chopped celery and mix until ingredients are thoroughly combined.
  3. Stir in lemon juice, salt and pepper.
