INGREDIENTS

  • 0 1/3 cup Real Mayonnaise
  • 0 1/2 fl oz Fresh Lemon Juice
  • 2 tsp Curry Powder
  • 1 1/4 lb Shrimp
  • 0 1/2 medium Yambean (Jicama)
  • 3 half Avocado, Hass
  • 1 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average

DIRECTIONS

  1. In a large bowl, mix mayonnaise, lemon juice and curry powder until smooth.
  2. Add shrimp and jicama; toss to coat evenly with dressing. Season to taste with salt and pepper.  Serve with 1/4 sliced avocado and 2 wedges of tomato.
