Ingredients:
- 2 teaspoons Curry Powder
- 1/2 fluid ounce Fresh Lemon Juice
- 1/3 cup Real Mayonnaise
- 1/2 medium Yambean (Jicama)
- 3 halves Avocado, Hass
- 1 1/4 pounds Shrimp
- 1 medium whole (2-3/5" diameter) Tomato, red, ripe, raw, year round average
Directions:
- In a large bowl, mix mayonnaise, lemon juice and curry powder until smooth.
- Add shrimp and jicama; toss to coat evenly with dressing. Season to taste with salt and pepper. Serve with 1/4 sliced avocado and 2 wedges of tomato.
