Keto Curried Shrimp Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 2 teaspoons Curry Powder
  • 1/2 fluid ounce Fresh Lemon Juice
  • 1/3 cup Real Mayonnaise
  • 1/2 medium Yambean (Jicama)
  • 3 halves Avocado, Hass
  • 1 1/4 pounds Shrimp
  • 1 medium whole (2-3/5" diameter) Tomato, red, ripe, raw, year round average

Directions:

  1. In a large bowl, mix mayonnaise, lemon juice and curry powder until smooth.
  2. Add shrimp and jicama; toss to coat evenly with dressing. Season to taste with salt and pepper.  Serve with 1/4 sliced avocado and 2 wedges of tomato.
