Keto Cranberry Parfait
Cooking tip: We love the idea of customizing this recipe to make it your own! Consider adding some unsweetened coconut or nuts.  If you do add ingredients, just be sure to keep an eye on net carbs.

Ingredients:

  • 1 cup, whole Cranberries
  • 1/4 cup Vanilla Whey Protein (no sugar added)
  • 3 cups Tap Water
  • 8 ounces Sugar Free French Vanilla Syrup
  • 2 1/2 envelopes Gelatin, unsweetened
  • 4 individual packets Sucralose Based Sweetener (Sugar Substitute)

Directions:

  1. In a blender, combine cranberries, vanilla syrup and shake mix. Purée until smooth.
  2. In a mixing bowl, pour 1 cup cold water; sprinkle gelatin into water and let stand 1 minute.
  3. Combine remaining 2 cups water with sugar substitute and bring to a boil (either in a microwave or on the stovetop). Add hot water mixture to gelatin mixture; stir until gelatin dissolves.
  4. Add berry mixture and stir until smooth. Pour into eight custard cups. Chill at least 3 hours to set.
