Cooking tip: Having a party? When planning your low carb spread, think about which dishes you can make in advance and which need fresh ingredients that day.

Ingredients:

  • 1/4 cup sliced Onions
  • 1 fluid ounce Fresh Lime Juice
  • 1 1/2 tablespoons Real Mayonnaise
  • 1/3 tablespoon Parsley
  • 8 ounces Blue Crab (Canned)
  • 1/4 pepper, large (3-3/4" long, 3" dia) Yellow Sweet Peppers
  • 1/4 teaspoon Salt

Directions:

  1. In a medium bowl, combine diced bell pepper, diced yellow onion, lime juice, mayonnaise, parsley, and salt. Gently fold in crab to coat, trying to keep chunks intact.
  2. Divide crab mixture into two oversized martini glasses or small clear dessert bowls, mounding mixture with a spoon. Serve immediately or cover and chill up to 1 hour.
