INGREDIENTS

  • 4 medium (4-1/8" long) Scallions or Spring Onions
  • 1 cucumber (8-1/4") Cucumber (with Peel)
  • 1 cup chopped Celery
  • 1 medium (approx 2-3/4" long, 2-1/2" dia) Red Sweet Pepper
  • 1 small Yellow Summer Squash
  • 1 medium Carrots
  • 8 large (1" to 1-1/4" dia) Radishes
  • 8 serving Garlic Ranch Dressing

DIRECTIONS

  1. Dice the cucumber, bell pepper, squash and carrot.  Slice the radishes and finely chop the green onions.
  2. Combine cucumber, radishes, celery, bell pepper, squash, green onions, and carrot in a large bowl. Just before serving, toss with Garlic Ranch Dressing (do not toss in advance or salad will become soggy).
