Confetti Salad with Ranch Dressing
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 4 medium (4-1/8" long) Scallions or Spring Onions
  • 1 medium (approx 2-3/4" long, 2-1/2" diameter) Red Sweet Pepper
  • 1 small Yellow Summer Squash
  • 8 large (1" to 1-1/4" diameter) Radishes
  • 1 cup chopped Celery
  • 1 cucumber (8-1/4") Cucumber (with Peel)
  • 1 medium Carrot

Directions:

  1. Dice the cucumber, bell pepper, squash and carrot.  Slice the radishes and finely chop the green onions.
  2. Combine cucumber, radishes, celery, bell pepper, squash, green onions, and carrot in a large bowl. Just before serving, toss with Garlic Ranch Dressing (do not toss in advance or salad will become soggy).
