Confetti Meatloaf

Ingredients:

  • 1 medium Carrot
  • 2 tablespoons Worcestershire Sauce
  • 1 large Egg (Whole)
  • 4 tablespoons Unsweetened Ketchup
  • 1 cup Diced Tomato
  • 1 1/2 teaspoons Salt
  • 3/4 teaspoon Black Pepper
  • 1 1/2 pounds Ground Beef (80% Lean / 20% Fat)
  • 1 cup Mung Beans (Mature Seeds, Sprouted)

Directions:

Use the Atkins recipe to make Atkins Low Carb Wheat Bread, you will need 3 slices - toasted. 
  1. Heat oven to 375°F. Place toast in a food processor to make fine crumbs; transfer to a large bowl. Add ground meat, tomatoes, beans, egg, diced carrot, Worcestershire sauce, salt and pepper; mix gently until just blended.
  2. Spoon into 5- by 9-inch loaf pan, pressing firmly. Spread ketchup over top. Bake 60 to 70 minutes, until cooked through.
  3. Transfer to a platter, discarding any fat left in pan. Let stand at least 10 minutes before slicing.
