Keto Collard Greens with Ham and Onion

Ingredients:

  • 4 ounces boneless, cooked Fresh Ham
  • 1/2 cup Unsalted Butter Stick
  • 1 tablespoon Extra Virgin Olive Oil
  • 1/4 cup Vinegar (Cider)
  • 1 teaspoon Crushed Red Pepper Flakes
  • 1 small Onion
  • 1 ounce raw (yield after cooking) Salt Pork
  • 2 pounds Collards
  • 2 cups Chicken Broth, Bouillon or Consomme
  • 4 fluid ounces Sauvignon Blanc Wine
  • 1 teaspoon Salt

Directions:

  1. Heat oil in a large heavy skillet with a tight-fitting lid over medium-high heat. Small dice the onion and ham.  Add them to the hot oil and sauté until lightly browned, about 4 minutes. 
  2. Remove the hard stems from the collard greens and coarsely chop.  Add to the pan along with the broth, wine, vinegar, whole salt pork, red pepper flakes and salt; stir to combine. Bring mixture to a boil. Reduce heat, cover and cook 1½ hours, stirring occasionally. 
  3. Uncover and add butter. Cook an additional 10 minutes, with cover off, stirring occasionally. Discard salt pork and serve immediately.
