Coconut-Lime Mousse
Cooking tip: We love the idea of customizing this recipe to make it your own! If you add any ingredients, just be sure to keep an eye on net carbs.

Ingredients:

  • 4 individual packets Sucralose Based Sweetener (Sugar Substitute)
  • 1/4 cup Fresh Lime Juice
  • 2 ounces Cream Cheese
  • 1 cup Heavy Cream
  • 1 teaspoon coconut extract (sugar free)

Directions:

 
  1. Using an electric mixer, beat together 2 oz soft cream cheese and 4 packets of granular sugar substitute (equivalent to 8 teaspoons) until smooth.
  2. Slowly add 1/4 cup lime juice, beating until creamy.
  3. Beat in 1 teaspoon coconut extract (vanilla may be used if coconut is unavailable) and 1 cup heavy cream until fluffy.
  4. Place in four bowls, sprinkle with 1 Tbsp unsweetened coconut flakes each (optional, don't forget to add in .4g NC carbs) and refrigerate until serving.
