Classic Swiss Fondue with Crudit

Ingredients:

  • 1 teaspoon Nutmeg (Ground)
  • 8 ounces Emmentaler Cheese
  • 1 teaspoon Garlic
  • 7 ounces Radishes
  • 8 ounces Sauvignon Blanc Wine
  • 2 cups shredded Gruyere Cheese
  • 16 ounces Mushroom Pieces and Stems
  • 2 pounds Asparagus
  • 1/2 teaspoon White Pepper

Directions:

  1. Combine cheeses, nutmeg and pepper in a mixing bowl; mix well.
  2. Place wine and minced garlic in a large saucepan and bring to a simmer over medium heat. Add cheese mixture by cupfuls, whisking well after each addition. Reduce heat to medium-low and cook, whisking constantly, until smooth, about 5 minutes.
  3. Transfer to fondue pot set over a flame and serve with vegetables.
