DIRECTIONS

This low carb egg salad recipe is a keto-friendly, protein-packed lunch or snack that can be made ahead when meal prepping.
 
  1. Dice the eggs and onion.  Combine them with the mayonnaise, lemon juice, celery, salt, and pepper in a bowl.
  2. Serve on top of lettuce either alone or in a sandwich by rolling it up in the lettuce leaves. A rounded 1/2 cup is approximately one serving.

Cooking Tip

For a bigger meal, stuff half an avocado with the keto egg salad and top with diced tomato! Don't forget to add in the extra net carbs.
