INGREDIENTS

  • 7 large Boiled Egg
  • 1 1/2 Tbsp Red Onion, raw chopped
  • 1/4 cup Real Mayonnaise
  • 2 tsp Fresh Lemon Juice
  • 1/2 cup chopped Celery
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 4 leaf small Butterhead Lettuce (Includes Boston and Bibb Types)

DIRECTIONS

  1. Dice the eggs and onion.  Combine them with the mayonnaise, lemon juice, celery, salt, and pepper in a bowl.
  2. Serve on top of lettuce either alone or in a sandwich by rolling it up in the lettuce leaves.

Cooking Tip

For a bigger meal, stuff half an avocado with the egg salad and top with diced tomato! Don't forget to add in the extra net carbs.
