DIRECTIONS
This low carb egg salad recipe is a keto-friendly, protein-packed lunch or snack that can be made ahead when meal prepping.
- Dice the eggs and onion. Combine them with the mayonnaise, lemon juice, celery, salt, and pepper in a bowl.
- Serve on top of lettuce either alone or in a sandwich by rolling it up in the lettuce leaves. A rounded 1/2 cup is approximately one serving.
Cooking Tip
