7 large Boiled Egg
1 1/2 Tbsp Red Onion, raw chopped
0 1/4 cup Real Mayonnaise
2 tsp Fresh Lemon Juice
0 1/2 cup chopped Celery
0 1/4 tsp Salt
0 1/4 tsp Black Pepper
4 leaf small Butterhead Lettuce (Includes Boston and Bibb Types)
This low carb egg salad recipe is a keto-friendly, protein-packed lunch or snack that can be made ahead when meal prepping.
- Dice the eggs and onion. Combine them with the mayonnaise, lemon juice, celery, salt, and pepper in a bowl.
- Serve on top of lettuce either alone or in a sandwich by rolling it up in the lettuce leaves. A rounded 1/2 cup is approximately one serving.
For a bigger meal, stuff half an avocado with the keto egg salad and top with diced tomato! Don't forget to add in the extra net carbs.
