Chorizo, Green Chili and Tomato Frittata

Ingredients:

  • 8 ounces Green Chili Peppers (Canned)
  • 2 ounces Cheddar Cheese
  • 12 large Eggs (Whole)
  • 6 ounces Pork and Beef Chorizo
  • 2/3 cup, chopped or sliced Red Tomatoes

Directions:

  1. Preheat broiler.
  2. In a large oven-proof skillet, sauté the chorizo, breaking it up into bite-sized pieces over medium-high heat until cooked through; about 5 minutes. Drain off excess fat and leave in the pan. While chorizo is cooking, shred the cheese and dice the tomatoes and set both aside.
  3. Mix green chilies and tomatoes to evenly distribute with the chorizo. Pour in lightly beaten eggs, and top with shredded cheese. Cook over medium-high heat for 4-5 minutes then place pan under the broiler for 3-4 minutes until light and slightly puffed. Serve immediately.
