Ingredients:
- 3/4 cup Wild Rice (Cooked)
- 1 small Red Onion
- 3 tablespoons Extra Virgin Olive Oil
- 3 tablespoons Red Wine Vinegar
- 1 pound Green Snap Beans
- 2 ounces Blue or Roquefort Cheese
- 4 cups shredded Radicchio
Directions:
- In a large bowl, whisk oil slowly into vinegar until slightly thickened. Season with salt and pepper to taste.
- Add blanched chopped green beans, chopped radicchio, rice and sliced red onion; toss well with dressing. Add blue cheese and toss until well-blended. Serve immediately.
