Chopped Salad with Wild Rice
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 3/4 cup Wild Rice (Cooked)
  • 1 small Red Onion
  • 3 tablespoons Extra Virgin Olive Oil
  • 3 tablespoons Red Wine Vinegar
  • 1 pound Green Snap Beans
  • 2 ounces Blue or Roquefort Cheese
  • 4 cups shredded Radicchio

Directions:

  1. In a large bowl, whisk oil slowly into vinegar until slightly thickened. Season with salt and pepper to taste.
  2. Add blanched chopped green beans, chopped radicchio, rice and sliced red onion; toss well with dressing. Add blue cheese and toss until well-blended. Serve immediately.
