INGREDIENTS

  • 4 tbsp Tamari Soybean Sauce
  • 0 1/4 cup Fresh Lemon Juice
  • 1 tbsp Toasted Sesame Oil
  • 6 tsp No Calorie Sweetener
  • 0 1/2 cup chopped Celery
  • 24 oz, boneless, cooked Chicken Breast
  • 4 cup, chopped Cabbage
  • 1 head Endive
  • 1 cup slices Cucumber (with Peel)
  • 0 1/2 cup, sliced Red Sweet Pepper
  • 0 1/2 cup, whole or halves Macadamia Nuts
  • 0 1/8 cup Cilantro (Coriander)

DIRECTIONS

  1. In a large bowl, mix tamari, lemon juice, sesame oil and sugar substitute.
  2. Add diced chicken, shredded cabbage, chopped endive, sliced cucumber, sliced pepper (optional: use 1/4 cup red bell pepper and 1/4 cup yellow bell pepper) and diced celery; toss well.
  3. Let the salad sit for 15 minutes for flavors to blend. Mix in nuts and cilantro before serving.
