Ingredients:

  • 1 pound (16 ounces) boneless, cooked chicken breast
  • 1 medium stalk celery (40g), diced
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped
  • 8 leaves butterhead lettuce (120g)
  • 2 large radishes (18g)

Directions:

  1. Cut chicken into 1/2-inch cubes.
  2. Mix celery, mayonnaise, mustard, and parsley in a bowl. Add chicken and toss to coat.
  3. Divide into four portions and serve on large lettuce leaves. Garnish with quartered or sliced radishes and dust with paprika (optional).
