Ingredients:
- 1 pound (16 ounces) boneless, cooked chicken breast
- 1 medium stalk celery (40g), diced
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 tablespoon fresh parsley, chopped
- 8 leaves butterhead lettuce (120g)
- 2 large radishes (18g)
Directions:
- Cut chicken into 1/2-inch cubes.
- Mix celery, mayonnaise, mustard, and parsley in a bowl. Add chicken and toss to coat.
- Divide into four portions and serve on large lettuce leaves. Garnish with quartered or sliced radishes and dust with paprika (optional).
