Keto Chicken-Pesto Salad
Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.

Ingredients:

  • 1/3 cup Real Mayonnaise
  • 1/8 teaspoon Black Pepper
  • 1/3 cup chopped Onions
  • 2 tablespoons Parsley
  • 1/4 teaspoon Salt
  • 1 stalk, medium (7-1/2" - 8" long) Celery
  • 2 cup, cooked, diceds Chicken Breast
  • 2 tablespoons Pesto Sauce

Directions:

  1. Dice the celery and white onion.  Chop the chicken and parsley. 
  2. Combine celery, onion, chicken, parsley, mayonnaise, pesto, salt, and pepper in a bowl. Serve right away with cherry tomatoes or over sliced tomatoes (optional) or refrigerate in an airtight container for up to 3 days.
