Chia-Pecan Overnight Oats

Ingredients:

  • 2 tablespoons Chia Seeds
  • 1/4 cup Quaker Oats Old-Fashioned Rolled Oats
  • 1/3 tablespoon Raspberry Jam, sugar free
  • 1 cup Coconut Milk Beverage, plain, unsweetened
  • 1 oz (20 halves) Pecans

Directions:

  1. Roughly chop the pecans and place in a jar with a tight fitting lid. Add the chia seeds, oats, and coconut milk, attach the lid and shake to combine. Refrigerate until ready to eat (at least 4 hours).
  2. To serve, top the chia-oat mixture with a 1 teaspoon dollop of sugar free raspberry jam. This can be warmed up or eaten cold. Add a pinch of non-caloric sweetener and/or cinnamon if desired.
