Keto Cheddar Omelet with Swiss Chard and Onions

Ingredients:

  • 1/4 cup chopped Onions
  • 2 cups Swiss Chard
  • 1 tablespoon Light Olive Oil
  • 2 large Eggs (Whole)
  • 1/4 cup shredded Cheddar Cheese

Directions:

  1. Heat a nonstick skillet with 2 teaspoons oil over medium-high heat. Add chopped white onions and sauté until tender. Coarsely chop the chard and add it to the pan, sauté until wilted. Squeeze as much water as possible from the chart by pressing it with the back of a spatula and draining. Remove from pan and set aside.
  2. In same pan, add remaining teaspoon of oil and eggs and cook 2 to 3 minutes till firm on one side. Flip and cook 1 more minute. To half of the omelet add onions and chard, top with cheese and fold over other half. Cook another 1 to 2 minutes to melt cheese. Season to taste with salt and freshly ground black pepper and serve.
