Cheddar and Green Onion Pie

Ingredients:

  • 6 medium (4-1/8" long) Scallions or Spring Onions
  • 3 cups shredded Cheddar Cheese
  • 4 large Eggs (Whole)
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Original Pepper Sauce
  • 1/3 cup, whipped Whipping Cream
  • 1/4 teaspoon Black Pepper

Directions:

  1. Prepare 1 recipe of Atkins Pie Crust.  Prebake the crust before filling.
  2. Preheat oven to 350°F. In a saucepan over very low heat, stir eggs, cream, cheese and diced green onions until combined. Heat until mixture is hot and most of the cheese has melted (do not let boil!), about 7 minutes, stirring occasionally. Stir in salt, pepper and Tabasco sauce.
  3. Pour mixture into pie shell. Bake 30 minutes, until filling is set, and begins to brown slightly. Serve warm. Makes 8 servings.
