Ingredients:
- 1 head large (6-7" diameter) Green Cauliflower
- 1 small Red Onion
- 1/2 teaspoon Black Pepper
- 6 large Eggs (Whole)
- 1 1/2 teaspoons Salt
- 1 cup Cooked Green Peas (from Frozen)
- 1/2 cup Matzo Meal
Directions:
- In a food processor, finely chop cauliflower and onions together. Stir in eggs, matzo meal, salt, pepper and peas. Pulse to combine.
- Heat an ungreased nonstick griddle over medium heat. For each pancake, scoop out ¼ cup batter and flatten with a spatula to a 3 diameter. Cook pancakes 1 to 2 minutes per side, until golden brown
