Cauliflower-Pea Pancakes

Ingredients:

  • 1 head large (6-7" diameter) Green Cauliflower
  • 1 small Red Onion
  • 1/2 teaspoon Black Pepper
  • 6 large Eggs (Whole)
  • 1 1/2 teaspoons Salt
  • 1 cup Cooked Green Peas (from Frozen)
  • 1/2 cup Matzo Meal

Directions:

  1. In a food processor, finely chop cauliflower and onions together. Stir in eggs, matzo meal, salt, pepper and peas. Pulse to combine.
  2. Heat an ungreased nonstick griddle over medium heat. For each pancake, scoop out ¼ cup batter and flatten with a spatula to a 3 diameter. Cook pancakes 1 to 2 minutes per side, until golden brown
