Cooking tip: For added creaminess and to cool the heat, combine the blue cheese with a couple tablespoons of sour cream.
Ingredients:
- 1 tablespoon Olive Oil
- 3 teaspoons Sriracha Hot Chili Sauce
- 1 1/2 ounces Blue or Roquefort Cheese
- 4 tablespoons Red Hot Buffalo Wing Sauce
- 2 tablespoons Unsalted Butter Stick
- 1 head large (6-7" diameter) Cauliflower
- 1 1/3 tablespoons Apple Cider Vinegar
Directions:
- Preheat oven to 375°F.
- Cut the cauliflower into smaller florets and drizzle with the olive oil. Roast on a baking sheet for 35-40 minutes, or until tender.
- When cauliflower has about 10 minutes left to roast, warm a large skillet over medium heat. Add the hot wing sauce and Sriracha to the pan and cook until bubbling and reduced to a paste, about 5 minutes. Remove from heat and stir in the butter and vinegar.
- When the cauliflower is done roasting, add it to the skillet with the sauce and toss to evenly coat all the cauliflower. Serve immediately with blue cheese sprinkled on top.
