INGREDIENTS

  • 8 pepper Jalapeno Peppers
  • 3 oz Brie Cheese
  • 0 1/4 tsp Salt
  • 0 1/4 tsp Black Pepper
  • 8 tbsp Kalamata Olive Tapenade

DIRECTIONS

Jalapeño poppers are famous bar food loaded with carb-rich breading that can bog you down with calories. These grilled poppers are lighter, but still have satisfying gooey cheese inside.  If you can’t find olive tapenade (an olive based dip), try serving these with a few tablespoons of the Ranch Dressing.

 

Cut the tops of the jalapeños off. Using the small end of a melon baller to remove the seeds or use a small pairing knife to cut the seeds out.  Slice brei into 8 equal pieces. Place a piece of brie into each jalapeño.

 

Set oven to broil. Coat a grill or baking sheet with olive oil spray. Coat the jalapeños with a layer of olive oil spray. Grill or place the peppers under the broiler on the middle rack, 5 to 6 minutes, until the peppers start to blister and the cheese melts.  Serve immediately with the tapenade.
