Breaded Scrod with Basil-Mustard Sauce

Ingredients:

  • 2 pounds Atlantic Cod
  • 3 teaspoons Garlic
  • 1/4 cup Fresh Lemon Juice
  • 7 tablespoons Extra Virgin Olive Oil
  • 2 teaspoons Dijon Mustard
  • 1 teaspoon leaf Oregano
  • 16 tablespoons Basil

Directions:

Use the Atkins recipe to make Atkins Low Carb Wheat Bread, you will need 4 slices. 
  1. Preheat oven to 400°F.
  2. Put fillets on rimmed cookie sheet. Pour juice over fillets and season with salt and pepper.
  3. In food processor, process bread, garlic and oregano until fine crumbs form. With machine running, pour in 1 tablespoon of olive oil; process to combine.
  4. Evenly divide crumb mixture and pat over fillets. Roast 12 minutes, until just cooked through.
  5. While fish is cooking make the sauce: In a blender, purée 1 cup packed basil leaves with remaining 6 tablespoons (1/3 cup) olive oil and a dash of salt and pepper. Pour sauce into a small bowl and whisk in mustard. To serve, spoon sauce around fish.
