Ingredients:
- 2 pounds Atlantic Cod
- 3 teaspoons Garlic
- 1/4 cup Fresh Lemon Juice
- 7 tablespoons Extra Virgin Olive Oil
- 2 teaspoons Dijon Mustard
- 1 teaspoon leaf Oregano
- 16 tablespoons Basil
Directions:
Use the Atkins recipe to make Atkins Low Carb Wheat Bread, you will need 4 slices.
- Preheat oven to 400°F.
- Put fillets on rimmed cookie sheet. Pour juice over fillets and season with salt and pepper.
- In food processor, process bread, garlic and oregano until fine crumbs form. With machine running, pour in 1 tablespoon of olive oil; process to combine.
- Evenly divide crumb mixture and pat over fillets. Roast 12 minutes, until just cooked through.
- While fish is cooking make the sauce: In a blender, purée 1 cup packed basil leaves with remaining 6 tablespoons (1/3 cup) olive oil and a dash of salt and pepper. Pour sauce into a small bowl and whisk in mustard. To serve, spoon sauce around fish.
