Ingredients:

  • 2 1/4 cups Blackberries
  • 1 teaspoon Orange Zest
  • 1 cup Buttermilk (Reduced Fat, Cultured)
  • 1/3 cup Sucralose Based Sweetener (Sugar Substitute)

Directions:

  1. In a medium saucepan, bring blackberries, sugar substitute, 2 tablespoons water, and orange zest to a boil. Reduce heat and simmer, covered, for 15 minutes, stirring occasionally, until berries break down. Cool quickly by placing in a bowl sitting in another larger bowl filled with an ice water bath.
  2. Place cooled berry mixture in a food processor. Process until smooth. Press through a fine strainer into a bowl. Stir in buttermilk. Chill in refrigerator 1 hour or until cold.
  3. Pour into an ice-cream maker and run according to manufacturer's directions. Transfer to a bowl and freeze 2 to 3 hours before serving. 1 serving is about 1/2 cup.
