Banana Coconut Muffins

Ingredients:

  • 1 teaspoon Vanilla Extract
  • 1/8 teaspoon Cloves (Ground)
  • 1 cup, mashed Bananas
  • 1 /4 cup Organic High Fiber Coconut Flour
  • 1/2 teaspoon Baking Powder (Sodium Aluminum Sulfate, Double Acting)
  • 3 large Eggs
  • 1/4 teaspoon Salt
  • 2 tablespoons Sucralose Based Sweetener (Sugar Substitute)
  • 1 teaspoon Cinnamon
  • 1/4 teaspoon Nutmeg (Ground)
  • 3/4 cup Blanched Almond Flour
  • 4 tablespoons Organic Virgin Coconut Oil

Directions:

  1. Preheat oven to 350°F. Spray muffin tin with oil or use 8 paper liners. 
  2. Combine the oil and eggs. Add bananas, sucralose, and vanilla. Mix thoroughly. 
  3. In a separate bowl combine the almond flour, coconut flour, baking powder, salt, cinnamon, nutmeg, and cloves. Mix to combine and then add to the wet ingredients blending until fully integrated.
  4. Bake for 22 minutes until set in the center and fragrant. Cool for 10 minutes in the pan before removing.
