Ingredients:
- 4 tablespoons chopped Onions
- 1 teaspoon Garlic
- 2 tablespoons Extra Virgin Olive Oil
- 2 pounds Atlantic and Pacific Halibut
- 1 pepper Serrano Pepper
- 1 teaspoon Salt
- 1 small whole (2-2/5" diameter) Red Tomato
- 1/2 cup Coconut Cream
- 2 tablespoons Fresh Lime Juice
- 1 cup chopped Green Sweet Pepper
Directions:
The state of Bahia in Brazil includes what is known as the Coconut Coast and was first settled by the Portuguese. This heat of this well-seasoned fish dish is tamed with coconut milk.
- With a fork, whisk 1 tablespoon oil and all the lime juice on large platter, add fish, and turn to coat. Dice the onion, bell pepper and the serrano pepper (be sure to use gloves to protect your hands from the heat of the pepper - do not include the seeds or ribs if you want to reduce the heat). Mince the garlic and add to a bowl with the onions and peppers. Chop the tomatoes, place in a small bowl and set aside.
- Heat remaining tablespoon oil in a 12-inch nonstick skillet over medium heat. Add garlic and the diced onion and peppers. Cook 6 minutes until onion is translucent and peppers are just tender.
- Sprinkle 1/2 teaspoon of salt over fish and add fish to skillet; pour coconut milk over fish and add tomato. Reduce heat to medium-low and simmer 8 to 9 minutes, turning fish halfway through cooking time.
- Stir remaining salt into sauce, spoon over fish a few times, and serve immediately.
