Cooking tip: You can choose to make your own bread for this recipe, or use Keto or Low Carb bread with 1 gram net carbs per slice from the grocery store for this recipe.

Ingredients:

  • 8 ounces cream cheese, room temperature
  • 4 pieces cooked bacon (32g)
  • 1/4 cup sliced fresh jalapeño pepper (23g)
  • 8 ounces cheddar cheese, cut into 4 slices
  • 8 slices keto bread (or 4 slices Keto Bread)
  • 1 tablespoon butter

Directions:

Please use the Atkins recipe to make Keto Bread. You will need 4 regular slices or servings.
  1. Let the cream cheese soften at room temperature for about 30 minutes.
  2. Crumble the bacon and then combine it with the softened cream cheese and diced or sliced jalapeno peppers. 
  3. If using homemade Keto Bread, take 4 regular slices and slice them in half to make 8 thinner slices for 4 servings. 
  4. Spread the cream cheese mixture evenly over 4 slices of the bread. Layer the cheddar cheese over the cream cheese mixture and sandwich them together with the remaining slice of bread. Repeat for 3 more sandwiches.
  5. Melt the butter in a large non-stick skillet or grill pan over medium heat. Cook the sandwiches for 2-3 minutes then flip and cook an additional 2-3 minutes until browned and the cheese has melted.
