Atkins Pizza with Sausage, Bell Peppers and Onions

Ingredients:

  • 1 individual packet Sucralose Based Sweetener (Sugar Substitute)
  • 1/2 teaspoon Salt
  • 1 link (5" long) Italian Sausage
  • 1 cup Tap Water
  • 1/2 cup Tomato Sauce
  • 1 small Red Onion
  • 1 1/2 teaspoons Baking Powder (Straight Phosphate, Double Acting)
  • 1 cup shredded Whole Milk Mozzarella Cheese
  • 1/2 medium (approx 2-3/4" long, 2-1/2" diameter) Red Sweet Pepper
  • 3 tablespoons Extra Virgin Olive Oil
  • 1/2 medium (approx 2-3/4" long, 2-1/2" diameter) Green Sweet Pepper

Directions:

Use the Atkins recipe to make Atkins Soy-Free Flour Mix for this recipe. You will need 2 cups.
  1. Preheat oven to 425°F.
  2. Blend together baking mix, baking powder, salt and sugar substitute in a large mixing bowl.
  3. Add water and olive oil, using a spoon or spatula to combine into a wet dough. 
  4. Scrape dough onto a pizza pan and use wet fingers or a wet silicone spatula to spread into an even layer.
  5. Bake the crust for 10 minutes and remove from oven.
  6. Spread tomato sauce evenly over the pizza. Sprinkle with mozzarella and top with sausage rounds, green and red bell pepper slices and onions. Sprinkle with salt and pepper to taste.
  7. Return to the oven and continue baking for 10-15 minutes. Cut into 8 slices.
