Ingredients:
- 1 Atkins Strong Strawberry Protein Shake
- 2 teaspoons gelatin powder
- 2 teaspoons truvia sweet complete erythritol-stevia blend
- 1 teaspoon vanilla extract
- 3/4 cup (125g) sliced strawberries, divided
- 6 tablespoons heavy cream
- 1 Atkins Strong Birthday Cake Bar
Directions:
- Measure 1/4 cup of the Atkins Strong Strawberry Protein Shake into a small bowl. Add the gelatin and mix. Set aside.
- In a small saucepan over medium high heat, mix the remaining shake, sweetener, and vanilla extract. Warm to steaming, but not simmering. Remove from heat and stir in the gelatin mixture until fully dissolved.
- In a blender with one corner lifted to allow steam to release, puree 1/2 cup (83g) strawberries with the strawberry shake mixture. Pour into a medium bowl and refrigerate for 1 1/2-2 hours, until beginning to set.
- In a medium chilled bowl use a hand mixer to whip heavy cream to soft peaks. Add the gelatin mixture to the cream and beat until well combined and fluffy.
- Measure 1/2 cup (about 120g) pudding into individual serving cups and refrigerate until fully set, about 1 hour. Crumble the Atkins Strong Birthday Cake Bar and evenly top each serving of pudding (1/4 of a bar, or 15g for each serving of pudding). Garnish each serving evenly with remaining strawberries (about 1 tablespoon or 10g on each) and serve. One serving is 1/2 cup pudding, 1/4 of a bar, and 10g strawberry slices for garnish.
