Reuben Sandwich

Ingredients:

  • 8 ounces boneless, cooked Corned Beef
  • 1/2 cup shredded Cabbage
  • 2 tablespoons Unsalted Butter Stick
  • 4 slice (1 ounce) Swiss Cheese

Directions:

This recipe using the Atkins Russian Dressing, which can be made up to 3 days before and stored in an air tight container. This sandwich would be delicious on a rye bread if you can find one that is low in carbs. Otherwise, use the Atkins recipe to make Atkins Low Carb Wheat Bread.  
  1. Butter each slice of bread.
  2. For each sandwich: On unbuttered side of bread spread 2 tablespoons cabbage (or sauerkraut maybe substituted), 3 slices corned beef, 1 slice cheese and 1 1/2 teaspoons Russian Dressing. Place second slice of bread, butter side up, on dressing. Repeat to make total of 4 sandwiches.  All sandwiches should have the buttered side facing on the outside of the sandwiches so they will grill up crisp.
  3. On griddle, cook sandwiches, tented with foil, 6 minutes, turning once, until toasted golden. Serve hot.
