Celebrate Earth Day with Green Recipes: Low Carb Salad Recipes & More

Each year, Earth Day is celebrated on April 22 to honor the Earth and the concept of peace. In the United States, Earth Day was founded by U.S. Senator Gaylord Nelson as an environmental teach-in, for which Nelson received the Presidential Medal of Freedom.

Just like green usually means a healthy planet, green typically means healthy food. Celebrate Earth Day this year by giving your body the greens it needs and checking out these low carb green recipes from Atkins:

Creole Shrimp Salad with Mixed Greens

Sometimes we need a little more than just greens in our salad. One of the best ways to do this is by throwing in a low carb meat, like shrimp.

Shrimp, Dijon mustard, paprika and pepper sauce come together to make this salad explode with flavors. In addition to being flavor-packed, this recipe is approved for phases 2, 3 and 4 of the Atkins program and has 35.2 grams of protein with only 12.2 grams of carbs.

Sesame Asparagus Salad

Not only is this snack low carb, with only 3.7 grams, but it is also extremely low in calories with just 70.6 grams per serving!

This Asian flavored dish is easy to prepare since you only need asparagus, tamari, rice wine vinegar, sesame oil, sugar substitute and sesame seeds. It’s approved for phases 2, 3 and 4 of the program.

Tarragon Shrimp Salad

Here is another great recipe if you need something other than greens in your salad. Once again, shrimp gives this green recipe the extra taste you are looking for.

Capers, anchovy fillets and Dijon mustard pack this low carb dish with flavor and 36.5 grams of protein, with only 1.7 grams of carbs. You can enjoy this fabulous recipe during any phase of the Atkins diet.
