Keto Turkey Breakfast Meatloaf

Ingredients:

  • 1 10 oz package Frozen Chopped Spinach
  • 24 ounce raw (yield after cooking) Turkey Breakfast Sausage
  • 1 1/2 pounds Ground Turkey
  • 1 medium (approx 2-3/4" long, 2-1/2" diameter) Green Sweet Pepper
  • 1/8 teaspoon Nutmeg (Ground)
  • 4 stalk, medium (7-1/2" - 8" long) Celery
  • 1 small Onion
  • 1/2 tsp, ground Thyme (Dried)
  • 1/8 tablespoon Red or Cayenne Pepper
  • 1 medium (approx 2-3/4" long, 2-1/2" diameter) Sweet Red Peppers
  • 6 large Eggs (Whole)

Directions:

  1. Preheat oven to 350°F. Spray 2 standard loaf pans (4 by 9 inch) lightly with oil.
  2. Thaw the spinach and coarsely chop. In a large bowl, combine spinach with diced celery, diced bell peppers, diced white onion, garlic powder, dried thyme, salt, pepper, nutmeg, and cayenne pepper.
  3. Add turkey breakfast sausage, ground turkey, and eggs, mixing until thoroughly combined. Distribute evenly between prepared loaf pans. 
  4. Bake until cooked through and browned on top; about 55-65 minutes. If needed, brown under the broiler for 6-8 minutes. Serve immediately with sugar free ketchup (add 1 net carb per tablespoon) or freeze in individual portions for up to 2 months.
