Seafood Gumbo

Ingredients:

  • 2 stalk, medium (7-1/2" - 8" long) Celery
  • 1 teaspoon Garlic
  • 1 14.5 ounces can Chicken Broth, Bouillon or Consomme
  • 1 cup Tap Water
  • 1/4 teaspoon Crushed Red Pepper Flakes
  • 1 pound Atlantic Cod
  • 4 large Scallions or Spring Onions
  • 1 cup Stewed Tomato, canned
  • 1 medium (approx 2-3/4" long, 2-1/2" diameter) Green Sweet Pepper
  • 1 10 oz frozen package yield Cooked Okra (from Frozen)
  • 1/2 tsp, ground Oregano
  • 1/2 pound Shrimp
  • 1 tablespoon Light Olive Oil

Directions:

  1. Heat oil in a large saucepan over medium heat.
  2. Dice the green onions, pepper and celery; cook for 10 minutes, until softened. Stir in minced garlic and cook 1 minute more.
  3. Add tomatoes, broth, water, okra, oregano and red-pepper flakes. Cook on low 5 minutes for flavors to blend.
  4. Add fish and shrimp to saucepan; cook 3 to 4 minutes, until seafood is opaque and just cooked through. Season with salt and pepper. Serve with hot pepper sauce on the side.
