Scrambled Eggs with Bacon, Green Bell Peppers and Tomato Recipe

1 large whole (3" dia) Red Tomatoes
2 medium slice (yield after cooking) Bacon
0 1/2 cup, chopped Green Sweet Pepper
2 large Egg (Whole)
0 1/8 cup, shredded Cheddar Cheese
- Slice tomato into 2-3 thick slices and place on a plate. Season with salt and freshly ground black pepper; set aside.
- Cook bacon until crispy. Remove excess oil with a paper towel and layer onto the tomato slices.
- Sauté diced green bell pepper for 2-3 minutes in the same pan as the bacon (drain off excess fat first). Beat the eggs slightly and add them to the green bell peppers. Cook until the eggs are firm.
- Layer the bacon over the tomatoes, then the eggs. Sprinkle 2 Tbsp cheese on top; broil for one minute or microwave for 30 seconds to melt the cheese.
