Ingredients:
- 1/2 teaspoon Red or Cayenne Pepper
- 3 tablespoons Unsalted Butter Stick
- 2 large Scallions or Spring Onions
- 1 teaspoon Salt
- 2 cloves Garlic
- 1 1/2 tablespoons Fresh Lemon Juice
- 3 teaspoons Thyme
- 1 pound Scallop (Mixed Species)
- 1 teaspoon Lemon Zest
Directions:
- Sprinkle scallops with salt and cayenne.
- Heat butter in a large skillet over medium-high heat until it bubbles and begins to brown. Add minced garlic and chopped green onions; cook, stirring, 1 minute.
- Add scallops, thyme, and lemon zest to skillet. Sauté scallops 2-3 minutes per side, until lightly colored and cooked through.
- Plate then drizzle with lemon juice and serve immediately.
