Scallops with Thyme and Lemon

Ingredients:

  • 1/2 teaspoon Red or Cayenne Pepper
  • 3 tablespoons Unsalted Butter Stick
  • 2 large Scallions or Spring Onions
  • 1 teaspoon Salt
  • 2 cloves Garlic
  • 1 1/2 tablespoons Fresh Lemon Juice
  • 3 teaspoons Thyme
  • 1 pound Scallop (Mixed Species)
  • 1 teaspoon Lemon Zest

Directions:

  1. Sprinkle scallops with salt and cayenne.
  2. Heat butter in a large skillet over medium-high heat until it bubbles and begins to brown. Add minced garlic and chopped green onions; cook, stirring, 1 minute.
  3. Add scallops, thyme, and lemon zest to skillet. Sauté scallops 2-3 minutes per side, until lightly colored and cooked through.
  4. Plate then drizzle with lemon juice and serve immediately.
