Ingredients:
- 2 1/2 teaspoons table salt USDA
- 16 ounces fresh green beans USDA
- 1 1/2 teaspoons fresh garlic FNDDS
- 2 tablespoons fresh shallots, chopped USDA
- 2 tablespoons olive oil USDA
- 1/4 cup almond milk, unsweetened FNDDS
- 1 cup fresh young green scallions, chopped FNDDS
- 2 tablespoons heavy whipping cream USDA
Directions:
- Bring a large pot of water to a boil over high heat. Add 2 teaspoons salt and stir in trimmed green beans. Cook for 3 minutes until bright green, then strain and plunge into ice water to stop the cooking. Drain again and set aside.
- Mince or press garlic and mix with ½ teaspoon salt to form a paste. Set aside.
- In a 10-inch non-stick skillet, warm oil over medium heat. Once warm, add scallions and shallot and sauté until soft, about 4 minutes. Add garlic and sauté until fragrant, about 30 seconds. Add almond milk and cream, cooking and stirring until thickened, 2-3 minutes.
- Add green beans, tossing with the milk and scallion sauce until beans are warmed through, about 5 minutes. Serve immediately.
