INGREDIENTS

  • 0 1/4 cup REAL MAYONNAISE Unilever Bestfoods North America
  • 0 1/2 small Red Onions
  • 4 tbsp BASIL Casa Imports Inc.
  • 2 cup, chopped Watercress
  • 2 tbsp Tarragon
  • 0 2/3 tbsp WHITE WINE VINEGAR Mizkan America, Inc.
  • 0 1/4 cup slices Cucumber (with Peel)
  • 3 cup, shredded RADICCHIO European Vegetable Specialties Farms Inc.
  • 2 10 small GREEN OLIVES Whole Foods Market, Inc.
  • 1 cup CHERRY TOMATOES Hingenuity, Inc.
  • 1 medium (4-1/8" long) Scallions or Spring Onions
  • 3 tbsp Sour Cream (Cultured)

DIRECTIONS

  1. For the dressing: Combine mayonnaise, sour cream, diced scallion, basil, tarragon and vinegar in a blender. Process until smooth, stopping the blender to scrape down sides, as necessary.
  2. For the salad: Combine radicchio, watercress, coins of cucumber, quartered tomatoes and sliced onion in a bowl. Add the dressing and toss well to coat. Divide among 8 serving plates and top with a few pimento stuffed green olives (optional).

Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
