Cooking tip: Feel free to swap in your favorite lettuce for this recipe, as net carb change will likely be minimal.
Ingredients:
- 1 medium (4-1/8" long) Scallions or Spring Onions
- 4 tablespoons Basil
- 2 10 smalls Green Olives
- 1 cup Cherry Tomato
- 3 cups shredded Radicchio
- 1/4 cup slice Cucumber (with Peel)
- 2 cups chopped Watercress
- 1/2 small Red Onion
- 3 tablespoons Sour Cream (Cultured)
- 2 tablespoons Tarragon
- 2/3 tablespoon White Wine Vinegar
- 1/4 cup Real Mayonnaise
Directions:
- For the dressing: Combine mayonnaise, sour cream, diced scallion, basil, tarragon and vinegar in a blender. Process until smooth, stopping the blender to scrape down sides, as necessary.
- For the salad: Combine radicchio, watercress, coins of cucumber, quartered tomatoes and sliced onion in a bowl. Add the dressing and toss well to coat. Divide among 8 serving plates and top with a few pimento stuffed green olives (optional).
