Ingredients:
- 1/4 teaspoon Pumpkin Pie Spice Mix
- 1 tablespoon Coconut Flour
- 1/4 teaspoon Cinnamon, ground
- 2 tablespoons Pumpkin, canned
- 2 teaspoons Erythritol
- 1/2 scoop (1 scoop= 31 g) Quest Vanilla Milkshake Protein Powder
- 1/2 teaspoon(s) Coconut Oil
Directions:
- Blend together the protein powder, coconut flour and pumpkin pie spice in a small bowl. Add the pumpkin puree, melted coconut oil, and blend until a soft dough forms.
- Blend together the erythritol and cinnamon in a small bowl. Set aside.
- Roll the dough out between two layers of parchment paper into a 1/2-inch thin rectangle. Sprinkle about 1 tsp of the erythritol and cinnamon onto the surface of the rectangle then gently roll into a log. Divide the log into 8 pieces and gently roll each into a ball. Roll each ball into the remaining erythritol and cinnamon then place in a single layer in a container fit with an air tight cover. Keep refrigerated.
