Keto Mini Italian Meatloaves

Ingredients:

  • 5 pieces Dried Porcini Mushrooms
  • 1 1/2 pounds Ground Beef (80% Lean / 20% Fat)
  • 2 large Eggs (Whole)
  • 2 1/2 ounces Spaghetti/Marinara Pasta Sauce
  • 2 cups Spinach
  • 12 ounce raw (yield after cooking) Italian Sausage
  • 1/4 cup Dried Pine Nuts
  • 1/2 teaspoon Italian Seasoning

Directions:

This recipe is suitable for all phase of the Atkins diet except for the first 2 weeks of Induction due to the nuts. 
  1. Preheat oven to 350°F.
  2. Mist 4 mini-loaf pans with olive-oil spray. Set aside.
  3. Rehydrate mushrooms in 1/2 cup hot water, allow to sit for 10 minutes, then drain and dice.
  4. In a large mixing bowl, thoroughly combine ground beef seasoned with salt and freshly ground black pepper, chopped sausage, re-hydrated mushrooms, beaten eggs, pine nuts, herbs and chopped spinach. 
  5. Divide into four equal portions and press into greased loaf pans. Drizzle 1 tablespoon marinara sauce on top of each and place on a baking sheet. Bake for 50 minutes.
  6. Remove from oven and let rest for 10 minutes before serving.
