Ingredients:
- 1 teaspoon Ginger root, fresh gated
- 1 each Egg
- 2 ounces Mozzarella Cheese, fresh balls
- 2 tablespoons Almond Meal, from whole almonds
- 1/4 teaspoon Baking Powder
- 1 teaspoon Confectioners (powdered) erythritol
- 1 tablespoon Maple Syrup (sugar-free)
Directions:
Ingredient note: If you do not have fresh ginger, you can use ¼ teaspoon powdered ginger.
- Preheat a 4 slice waffle iron.
- Shred the cheese. In a small bowl, use a fork to combine all ingredients. Pour about ¼ cup batter into the center of each waffle section and press down. Cook using manufactures instructions, 3-6 minutes, or until the edges are golden and crispy. Remove from the waffle iron and let cool before consuming.
