Keto Maple-Chive Corn Mini Muffins

Ingredients:

  • 1 teaspoon Baking Powder (Straight Phosphate, Double Acting)
  • 1 tablespoon chopped Chives
  • 1 ounce White Cornmeal (Navajo)
  • 1/4 teaspoon Salt
  • 1 cup Whole Milk
  • 1 1/2 cup, stirreds Soy Flour (Full Fat)
  • 3 large Eggs
  • 3 tablespoons Vegetable Oil
  • 1/4 teaspoon Allspice Ground
  • 1/4 cup Maple Syrup (sugar-free)

Directions:

  1. Heat oven to 425°F. Coat 2 mini-muffin pans (12 muffin cups each) with cooking spray.
  2. In a medium bowl, combine soy flour, cornmeal, baking powder, allspice, salt and chives. 
  3. In a medium bowl combine the maple syrup, eggs, oil and milk. Add the wet ingredients to the dry ingredients. Stir until just combined. 
  4. Drop the batter by tablespoonfuls into the muffin cups, filling to the top of cups. Bake until a toothpick inserted in center of muffin comes out clean, 10-12 minutes. Transfer to a wire rack and cool 5 minutes. Remove muffins from pan and serve warm with butter or sugar-free preserves.
