0 3/4 cup Magic Baker zero sugar baking blend, Splenda

8 fl oz Real Lemon lemon juice, 100%
DIRECTIONS
- In a medium saucepot, bring water to a boil over high heat. Add ¾ cup granulated no sugar sweetener and stir until dissolved. Reduce heat to simmer and cook for 5 minutes. Remove from heat, stir in 1/8 teaspoon orange extract and store covered in the refrigerator if making in advance.
- Place 2 tablespoons granulated sweetener on a small plate. Dip the rim of a martini or coupe glass in water, then dip in granulated sweetener to create a “sugar” rim. Set aside to dry.
- For each cocktail, fill a 12-ounce tumbler with ice, add 2 ounces vodka, 2 ounces lemon juice, and 1 ½ ounces orange simple syrup (from step 1). Stir until chilled and strain into the rimmed glass. Garnish with a lemon twist and serve. One cocktail as described is one serving.
Cooking Tip
Most cocktails are sweetened, which creates a problem for those of us living a low carb lifestyle. To remedy that, we created a no-sugar simple syrup for this recipe using a commercially available blend of erythritol, allulose and stevia. The sweetener we used dissolved readily in the boiling water. If you use a different sweetener, make sure to stir until it is fully dissolved before reducing heat to simmer. Then be sure to taste the syrup and consider adding a few drops of liquid stevia or monkfruit extract if needed.
