INGREDIENTS

  • 6 Tbsp lime juice, unsweetened
  • 0 1/4 cup allulose, liquid sweetener
  • 0 1/4 tsp liquid stevia sweetener
  • 16 leaves fresh peppermint
  • 0 1/2 cup canned coconut milk
  • 3 cup municipal tap ice cubes
  • 6 fl oz sparkling water
  • 0 1/4 cup fresh pomegranate, arils

DIRECTIONS

  1. In each of two 16-ounce glasses, pour 3 tablespoons fresh lime juice, 2 tablespoons liquid allulose, and 1/8 teaspoon liquid stevia. Muddle 5 leaves of fresh peppermint with the lime juice in each glass.
  2. Mix the canned coconut milk very well, using a blender if needed. Add ¼ cup coconut milk to each glass and gently mix. 
  3. Crush the ice in a blender or food processor, then divide evenly between the two glasses, layering on top of the coconut-lime mixture. Fill the glasses with sparkling water, about 3 fluid ounces in each. Garnish each glass with 2 tablespoons pomegranate arils, and 3 leaves of peppermint. One mocktail as described is one serving.

Cooking Tip

We love this drink without alcohol, providing a fun, low carb beverage for everyone. But if you want to adapt to include alcohol, we really enjoyed including homemade low-carb coconut rum. Soak ½ cup unsweetened coconut shreds in ¾ cup white rum for at least 24 hours in the refrigerator, strain out the coconut shreds, gently pressing to get as much liquid out as possible, and add 2 tablespoons strained rum to each glass for a delightful cocktail.
