Lemon-Thyme Halibut with Sautéed Green Beans

Ingredients:

  • 4 tablespoons Butter
  • 1 clove Garlic
  • 1 teaspoon leaf Dried Thyme Leaves
  • 2 teaspoons Lemon Zest
  • 1 1/4 pounds Atlantic and Pacific Halibut
  • 2 tablespoons Olive Oil
  • 16 ounces Green String Beans
  • 1 fluid ounce Lemon Juice

Directions:

  1. For fish: Sprinkle fish with salt, pepper. Make a paste with 1 tablespoon lemon juice, minced garlic and thyme and cover the fish with it.
  2. Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Cook fish until just cooked through, about 4 minutes per side. Transfer to a plate, add remaining lemon juice, and cover to keep warm.
  3. Sauté green beans in the same skillet with the remaining 1 tablespoon oil and 2 teaspoons lemon zest.  Season with salt and freshly ground black pepper and cook until tender-crisp; about 5 minutes.  Serve with the halibut topped with 1 tablespoon butter.
