INGREDIENTS

  • 1 lb fresh cauliflower
  • 1 1/2 cup fresh celery
  • 1 cup fresh red bell pepper
  • 0 1/4 cup buffalo sauce
  • 0 1/4 cup Sriracha Cha! sriracha sauce
  • 4 Tbsp butter, unsalted
  • 2 Tbsp cider vinegar

DIRECTIONS

Equipment note: you will need 6-7 skewers for this recipe. If using wooden skewers be sure to soak in water for at least 10 minutes before grilling.


  1. Cut cauliflower into florets (20-25 florets total), cut celery into 20 1-inch pieces, and red pepper into 20 1-inch squares. Place in a large bowl.
  2. In a medium skillet over medium heat, combine buffalo wing sauce and sriracha, stirring to combine. Stir constantly while heating until thickened, about 7 minutes. Remove from heat, add butter and apple cider vinegar, stirring until butter is melted and everything is well combined.
  3. Pour buffalo sauce over the vegetables, tossing until evenly coated, and using a spoon to get sauce into the nooks and crannies of the cauliflower. Evenly thread vegetables onto skewers. Hold on to any leftover sauce for brushing on the kebabs as they cook.
  4. Heat grill. Reduce heat to medium flame and place kebabs on the grill. Turn kebabs every 3 minutes, brushing with remaining sauce after 3 turns. Grill until cauliflower is tender crisp and charred in places, about 15 minutes total. 
  5. About 1/2 cup grilled vegetables is one serving.

Cooking Tip

Cutting the cauliflower into even pieces is the key to making sure they are all cooked in the same amount of time. If you cut the florets a bit larger they will take a little longer to fully cook, and if they are on the smaller side, they will take less time. Begin checking for doneness after 4 turns (12 minutes). If you like your cauliflower more well done than tender crisp, consider blanching the cauliflower in boiling water before coating with the buffalo sauce and threading onto the skewers.
